Quick question -- i'm having my meat/beer refrigerator delivered today, as long as a Snake River Farsm Wagyu Brisket (Christmas gift, YUM). I'd like to wet age it in this fridge for a while, how long do people normally do that?
I would usually give them another 2 weeks after you get them to go 45 days, then either freeze or cook them up! I have gone a couple more weeks and that doesn't hurt anything.
