New York strip

    It's called a NY Strip because when held sideways it looks like the state of New York. Go take a look at a map.

      Yeah, NY Strip looks more like Tennessee than NY. Now a T-Bone steak looks like the outline of NY. But the strip.....naw.

    Just ordered one in a restaurant yesterday. Ordered it rare cuz they don't seem to unnerstand medium rare and over cook it. It came delivered to my table 44% gristle and cooked dead,
    as in well done. Didn't even take a bite. Refused it and had salmon which was cooked nicely. NY gristle it was.

      I only order steak out if it’s a nice steakhouse who’s known for quality cuts cooked right.

      That is always my experience, always, when ordering steaks at restaurants. No seasoning, gristle-fest, and overcooked. The last time I ordered one it was at a Lucky's steak house, a nicer steakhouse as far as chains go, much nicer than a Texas Roadhouse or Logan's. Yet, there it was, underseasoned, over-gristled, and overcooked, as feared and as predicted. I don't do it anymore. Can't.

    I imagine this will go over about as well as the attempt to rename pork chops t-bone chops or rib-eye chops or the Sears Tower the Willis Tower.

      I still call it Sears Tower.

      When I was a kid I was obsessed with the Sears tower. My Dad took me along when he traveled to Chicago on a work trip and we got to go up in the tower and I thought I was on my way to the moon while in that elevator! it was so cool. Plus, what a cool building on the skyline! I love it to this day.

    Never wondered why it was called a NY steak enough to look it up. Don’t care much what they call it…it’s one of my favorite steaks!

      Well, I am guessing that the housewife of 200 years ago only had one cooking vessel - a cast iron pot - to make about anything she needed to make. I.e. no pie pan.

    How about we use the non-geographical and non-clouty, non-claimy "strip steak"? It's beef flesh, it's not about a city or a state. You know, participation trophy style, since we're all winners, every one of us who make this great steak regardless of the chunk of dirt we call home or who first added it to their menu.

      My wife is one of those that loves steak, pork, chicken, etc, but doesn't want to actually think about where the food comes from. If the kids ever started asking where the meat came from, she would tell them to hush. If folks start talking about the actual animals the meat came from, she'll lose her appetite and stop eating. Very squeamish. I am just happy I have her eating med-well and sometimes medium steaks these days, without dousing them in A1!

      I'm gonna go against the grain here and call it a strip steak. Or the longissimus, that might be the right thing to do. Since that is the latin name and it makes me feel like a doctor.
