      I'm planning on a Saturday and Sunday cook. Monday will be more Memorial Day traditional. Weather was suspect earlier in the week. Now perfecto.

    I got mine defrosting in the fridge since Monday. Choice Grade....we'll see how we do. Plan is to trim on Friday and season/dry brine overnight and get it on the pit Saturday evening.
