Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
For now I'll say yes. 2 months is a long way off. I would do a flat as with you, It's me, my S.I.L and most likely the middle grandson who will be 12 that would consume it. Actually today saw a nice looking flat at a farm grocery store, Atkins Farm. I passed at $9.99/#.
As far as July 4th, I'll bow out. I'll be on Cape Cod with my son and daughter and their families. I'll have a lobster for y'all.

4 th oh July we will be in the Medicine Bow National Forest in WY fishing the Tongue River. I'll have to come up with a camping version and delayed pictures.

I have a Hasty Bake that I won right here on Amazing Ribs ! Also have a pellet grill but the HB is the best for daytime BBQ. Like my Thermoworks chef alarm and heat resistant gloves.
Count me in for Memorial Day. I'll look forward to this brisket smoking . Might be 1/2 time on the HB
and the remaining overnight cook on the pellet grill

Absolutely in on this. Memorial Day weekend is also our wedding anniversary weekend, and this year it'll be number 22. Me making a killer hunka meat was already on the docket, but now I know what cut it'll be: brisket! I'll do the same overnight-then-foil-boat approach that has worked so well on my vast experience base that includes BOTH of the briskets I've made thus far.

I have cooked only two briskets in my lifetime. Both were just OK in my opinion. The family said they were great. 🤷♂️. I shy away from them primarily because they yield so much. Just too much leftover. I tend to prefer beef short ribs because they are more manageable in that regard. However to support the spirit of the Pit, it’s worth another shot. I’m in unless something unexpected gets in the way. 👍

Hey! The lion share of the point can go to burnt ends and or chili, with beans. Both freeze exceptionally well. Then tacos schmacos, what have ya. Saw a post, recently, that made carnitas, partially cooked, bagged/tagged n frozen for later. I want that in my repertoire.

You got this. You could break it down like Panhead John is going to do. I would recommend cooking the point as it is more like short ribs and it is my favorite part. If you do the whole packer I really believe in the power of injecting the brisket along with dry brining.

I have a choice brisket in the freezer, around 10# I think. I’ll see if I can’t crerate an event to make it work. Charro beans would be a good side and maybe some Jalapeño Lime Coleslaw. But, my wife loves grilled corn on the cob. Keep us posted.

For those who don’t want all the meat or fuss of a brisket I think a chuck roast should be an acceptable substitute. I offered to cook a brisket this coming weekend and my gang wanted two chuckies instead.

Not memorial day but maybe the week after. I'll be at my mom's for the holiday and I won't have access to any cookers. The fourth is a family reunion, so someone will be cooking burgers but it won't be me. Us older folks have delegated all the cooking to the youngsters in the family.
