I know, I know....how on earth do I have steak leftovers?
Well, I totally misjudged how much skirt steak I needed for the quesadillas tonight so I now have this ~0.5 lb piece of leftover skirt.
So what has worked for you? The outside already nicely charred, so I am a little wary of doing it on the stove top. (And I assume the microwave is straight out of the picture.)
That leaves the oven or pellet grill. I've got my Thermoworks Smoke I can use. One thing I do have going for me is that I grilled these to about 130 F, which is slightly less done than what I would like. If the oven is a good idea....what temp do I use? 300 F? 400?
