    No carryover at all on these kobe roasts

    Pulled the medium at 135*, five minutes later it was 134, kept dropping so I put it back in when it hit 131. Just sayin'.

    Edit: now I pulled the other at 130, and it is now 131!

    If you tent it there will be carry over for sure.

      The one had no carryover no matter what temp I pulled it. The other carried 4*. Both of them were ridiculously rare, even the one at 140*. I finished slices under the broiler.

      The beef itself was outstanding, the finest roasts I've ever cooked.

        Instant read thermometer or indwelling metal probe? Just curious...

          Only asked because I have heard it espoused by some that the indwelling probes may conduct some heat in with the probe & give erroneously high readings. Perhaps carryover just caught up with the probe temp??? Be interesting to compare with Thermoprobe type thermometers & see if there was still little or no "carryover"...
