The one had no carryover no matter what temp I pulled it. The other carried 4*. Both of them were ridiculously rare, even the one at 140*. I finished slices under the broiler.
The beef itself was outstanding, the finest roasts I've ever cooked.
Only asked because I have heard it espoused by some that the indwelling probes may conduct some heat in with the probe & give erroneously high readings. Perhaps carryover just caught up with the probe temp??? Be interesting to compare with Thermoprobe type thermometers & see if there was still little or no "carryover"...
