    Gorgeous. I plan to make more this coming Fri and my BIL & his wife are coming over. We are going to enjoy a Napa petite sirah with them, can't wait.

      A nice red wine like that would complement them perfectly. I was finishing a pale
      ale over dinner and it was a bit much.

      Some really great cooks here, man, I am humbled every time I come to this place! My family raves about my cooks, but I know my skills are as mediocre as they come compared to the masters on this site. Thanks for sharing everybody!

      And how they turned out after cubing up for everyone - it's funny how the bark is so red mahogany colored on the smoker, and it actually seems to darken so much more after the wrap. I don't know. I was also quite proud of the smoke ring I got on these - aesthetically, it was killer, and from a pellet pooper at that! lol




      Got another rack of these, I gotta decide if I'ma do them for this coming Labor Day Shootout, or try a brisket again... so many tough choices!

      Now, if you had gotten a second grate for your Bronco you could have bunk bedded them....................and the bottom one would get auto basted (rotate mid cook to even that up). Or, leave on the membrane and hang 'em.

        DaveD that cut was from HEB identified only as Wagyu beef ribs. It didn't have the same type of meat cut as a typical plate rib on any portion of it, so I'd guess it was all back rib, just not spit into 4s.

        MsTwiggy the grates are 24 inches in diameter and the opening is 26 in diameter. I have a large family and many of them are present for dinner several times a week so small, low capacity grills would never work for us.

        hoovarmin I love the post oak chunks!! My smoke ring wasn't very well developed. Maybe because I put the wood on top of the grate as it wouldn't fit in my SNS basket. I should have lit them in the chimney along with my lump. And I was asking about your KJ because the two racks fit really nicely on there. I could tell it was bigger than my 22. 🔥🔥🔥❤️🐿

      Here we go - Served these with a Chimichuri, which I highly recommend. The acidity tames the deep beefiness of the short ribs. Esquites provided fruity notes, and mash potatoes balanced it all out. One of my favorite meals of all time.
