    Brisket and Click Akaushi

    Two questions about brisket.

    First, is a smaller brisket from younger beef, and would that make it more tender? Is a bigger brisket from older beef and tougher, or could it have better fat distribution because of age, or is it the opposite? No difference? Does size matter?😁

    I haven't done many briskets, less than ten. I want to do more.

    Second, I see that Click Akaushi has a lot better prices than places like SRF. Is that real Wagyu? If so, why so much cheaper, and if not, is it better than prime grade brisket? Am I going to notice a big difference in what I get if I order from Click Akaushi over a prime grade from Costco?

    The ones in the store are from feedlots whereby the target weight of the animal is probably 1200-1500 pounds. It's tough, period. Working muscle. Had a 5 pounder that was very tough and had a bad tasting flat (think dry red leather), the point was awesome like a well-marbled ribeye.

    No clue on cheaper Wagyu being actual Wagyu, or any Wagyu being actual Wagyu.

      I believe Click beef is American wagyu, so that would be a Wagyu cross with American cattle, typically angus. SRF is also wagyu angus cross. I’ve gotten a Click brisket and it is far superior to Costco prime.

        If you look at Troutman ‘s prices here for Akaushi , you can see how it can be quite cheap in Texas.

        While cruising to my local neighborhood BBQ supply store to buy some propane refills for my gasser, I noticed they had a new stock of beef in their meat locker. They just have one of those upright beverage type cooler with some ribeyes, New York strips, tri-tips and briskets for sale. They generally have SRF meats, which is


        Basically, we are paying a markup over Texas prices but Click is simply giving us much less of a markup. It is also important that we are buying directly from the ranch, whereas other online retailers are buying from the ranch and adding their own costs.

          The original Akaushi cows got to the US in 1994, SRF started their Wagyu herd in the 80’s. The 2 are slightly different, the stuff I’ve seen here in Texas looks similar to the lower line from SRF.

          A little poking around on the internet and it looks like there are ranches all over Texas now doing the same think Click Akaushi is. I suspect there are more ranches that are working on it but don’t have big enough herds at this point. The pricing looks similar all over the state.
