This recipe is the result of my original post looking for a turkey sausage recipe. I took the recipe that Texas Larry linked to and scaled it down to work with 2-lbs of 93% lean ground turkey. My scale only does single digit gram readings so I rounded up or down accordingly.
Ingredients
2 lbs - Turkey Breast
1.0 g - Fresh Thyme
5.56 g - Fresh Sage
9.56 g - kosher salt (.8%)
4.44 g - black pepper
4.0 g - garlic powder
4.0 g - onion powder
3.33 g - ground ginger
2.22 g - cayenne pepper
2.22 g - turmeric powder
3.02 g - Pink curing salt
Directions
Mix all the ingredients and press into patties. Smoke at 225 until the patties reach an internal temperature of 162. (This is a departure from the way I cooked them, but I think they would cook a little quicker and hopefully retain a little more moisture.)
Results: This was my first time attempting this recipe. I started smoking at approximately 150-160 as suggested in the video. After 30 minutes I let the temp slowly rise. First 20 minutes at 200, then the last 20 minutes at 230. The flavor is very good, not too salty and there is a nice little kick from the Cayenne pepper. As noted above, the next time I plan to cook them at 225.
