    Thank you. I have not attempted curing yet because of my fear of making a mistake. Your articles and calculator are making me closer to giving it a shot. PS - Please remind Santa that your book is on my Christmas list. I bought Lopez-Alt's book based on your advice and love it. I keep leaving Amazing Ribs open for my wife to remember it's on my list.

      I just finished and served my first pastrami last Friday to great reviews. Just follow the simple recipe. It's a lot of fun and the results are worth the effort.
