    Kenji’s wok book is terrific. Like The Food Lab and his videos the techniques are more valuable than the recipes. Velveting meat is a game changer.

      SPAM is a staple in our house. Spam and Kimchi fried rice is made at least monthly. We make a few Korean recipes using SPAM.

      SPAM is the meat that defeated the Axis! The world owes it a bit more gratitude.

        Spam SOS, is that Spam in white-pepper gravy? It won't need salt, my guess.

        I have The Wok, but didn't get far enough into it to see this recipe! I'll have to sneak this one in on the wife and/or family, and see what she thinks after I tell her what she ate, haha!

        Last time I had SPAM was when my grandma made me a fried spam sandwich on white bread with mayonnaise back around 1986 or 1987. I went to college a couple miles from her house, and would go over there between classes to mow her grass every week, or rake leaves, and sit at her kitchen table talking about life while she fed me lunch. It was usually spam or bologna sandwiches, and maybe some tomato soup.

          That sandwich is my memory of spam. Fried bologna on white bread with mayo was pretty good, too.
