My only connection w Spam growing up was the Monty Python skit. These days I’ve been dipping into Kenji’s Wok book and came across his Kimchi and Spam fried rice recipe. I had everything but the Spam so I bought a can and made it.

I’ve got to say, it was delicious! That said, I’d like to see what this recipe tastes and feels like w leftover chicken instead of Spam. I definitely feel a bit leaden after eating that.

WWII, Hawaii. No refrigeration required. Shipping time from West Coast to Hawaii. Spam got big in the islands. I believe that Hawaii and a Scandinavian country remain as the largest per capita consumers of Spam. McDonalds even has a Spam sandwich in Hawaii. So I am told.
Carol’s family are Indonesian, they eat a lot of spam in fried rice. It is a staple, as is corned beef in the can. I guess when you live on a remote island, during a world war, and Japan has captured your country, canned meats become very popular. You learn to cook with what you have. I suspect Hawaii has a similar story. Canned meats last a really really long time.
