I've been living vicariously thru the posts on this thread.
A well planned and organized event and it looks like y'all are having a hoot.
Hopefully one day I can make it down for the hijinks.
I'd organized Southern Ontario meet up excepting for one problem....there ain't but two pits worth a damn in this dump and there hours apart....

gboss Yessiree, Memphis Fire BBQ would be top of the list followed by Cherry Street BBQ.
Strode's BBQ and Big Bone BBQ get mentioned but both only do pulled pork and pork ribs, no brisket, so not in the same class as the top two.

Amigos, this has been great vicarious fun. Three major events this weekend: Coronation, Derby, and NC Meat-Up. I confess following the latter most closely.
But there was one unsettling issue, seeing actual pictures of Panhead John. Not sure what I was expecting, but he looked like a normal aging guy. I was not equating "normal" with him. Live and learn.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Had an incredible time today with Mosca at the Carolina BBQ Fest. We got a great tip on easy free parking from CaptainMike who got there ahead of us. Tom had his real camera with him and will post the good pics later, but here’s a little preview.
Right as we came in we were greeted by this awesome cooker of Bryan Furman’s.
Bryan was offering St. Louis cut ribs with a mustard peach sauce. An interesting twist is he smoked as spares (90 racks!!) and cut down after cooking. Here is Bryan cutting down a rack.
I asked for only one end sauced and got a piece of trimming, too.
Just outstanding. The sauce was perfect and now I wish I had asked for sauce on the whole rib.
