So, for some reason we didn't take many pics of the first cook, but it was a success! We smoked 2 very small pork butts for pulled pork (awesome) and 4 racks of St. Louis ribs. Pulled pork took about 4 hours (they were very small!), but there was a lot of bark, which was great, and it was juicy and flavorful.
The ribs were pretty good, but could have used another 30 minutes or so, and also took about 5 hours.
The first cook was interesting, it is much more labor-intensive to cook on an offset, and constantly be adding more wood and tending the fire, but the results truly are better, everything tasted great and smokey, but without the bitter aftertaste that sometimes lingers on smoked food. Had a realtively hard time getting it up to temp at first, and keeping it, but we soon figured it out. We cooked at about 250-275f the whole time using mango and guava woods.
I cannot wait to cook on this beast again. It works like a charm. I'm checking with my friends to see if there are more pics, especially of the pork butts, because they were crowd favorites. If I get any, I'll share.
Thanks to everyone who followed along this process and helped with their encouragement and advice! I just renewed my membership to the Pit, so I've been here a year, and it has been an invaluable source of knowledge and inspiration. It has truly upped my game!

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
