Turkey size on my 22" kettle with SnS

    Hi all,

I've done a number of test runs with full chickens that have turned out better and better each time, so I decided to go all in and do the ultimate smoked turkey for Thanksgiving (this weekend here in the Great White North). The guys over at abc barbecue say that I should be able to spatchcock up to 20Lbs on my 22 with the SnS (https://abcbarbecue.com/turkey/), but I'm just wondering if anyone here has any experience with a bird that large? I've got 10 adults and 8 kids, so 20Lbs sounds about right. Any tips/tricks on fitting her in there?

    Thanks!

I cooked a 21 pounder last year (didn't spatchcock) but had to use the 26. I think a 20 would fit in the 22 if you spatchcock, but it will be tight.

I've done a 21 pounder on an 18" BGE (a couple/ three times). It was a bit tight, but it worked well enough.

I follow the Chris Lily school of BBQ for poultry, and stuffed a 28 pounder on a 22" last year. I setup a SnS, wrap the bird in foil, and stand it up beside the SnS, tail up. I do admit I had to stick a pretty heavy weight on the lid to get it sealed. Best of luck!

PS. I think the Lily philosophy is in the videos archive.

Thanks guys. Glad to know I should be able to squeeze it all in.

The biggest I ever got on my 22 with SnS was a 16 pounder, spatchcocked. That was a tight fit!

Rbroh, I generally Smoke My Turkeys Stuffed and Whole in a Roast Rack on My 22 1/2" Weber! I think I May Have Cooked a 16 -18 #'r in the Past❓ You Know What They Say❗️ "The Mind's the 2nd Thing to Go"❓ In any case if the Good People at www.abcbarbecue say a Spatchcocked 22 #'r Wil Fit I Think You Can Make Book on It❗️ I would Suggest You Use a Drip & Griddle with the S 'N S, IMHOP‼️

          That looks awesome!

I'm going to order a DnG, but I don't think they'll have it here in time for this turkey. Going to have to use an aluminum foil tray this time instead.

Rbroh I don’t have a kettle, I have a Weber Smokey Mountain 22.5. A spatchcocked 18-20 lb turkey fits on the WSM, which is the same size grate as a 22” Kettle. You’ll probably to adjust it’s position a bit so that the bird isn’t over the SnS.

here’s an idea of how it will fit ....

Looks good! I have been doing a 14-16lb. turkey on a rotisserie in my 22" WKG for Thanksgiving over 10 years. Last year I started using the SNS. Works great! I highly recommend the rotisserie kit for the WKG. I also purchased a basket for the rotisserie, and have made all kinds of food with it.

I know I did a 21 lb-er on the 18" LBGE once. Tight but doable.

You lose about 1/4 - 1/3 of the grate when using the SnS.

So, based on having a spatchcocked 20 lb turkey on my WSM 22, I am pretty sure using an SnS, you can make the turkey work. See picture above. Plenty of room to play with.

Ah OK - I wasn't aware of the constraint.

It will be tight but you should be able to get it to work.

It looks like the Drip n griddle will arrive today. Damn those guys at ABC bbq are good!

Anyone make their gravy right in the pan? The ultimate smoked Turkey recipe recommends something with 3.5quart capacity. Not sure the dng is big enough with only 1.5" depth.

EdF good idea regarding the wings. I've applied a similar concept with stuffing. Instead of stuffing the bird I cook it in a roasting pan with turkey legs on top.

My family are not fans of wood smoke with poultry. Seems to soak up too much smoke flavour. So it's charcoal only, which still gives a fair smokiness while not overpowering. Thanks again all.

Turkey turned out awesome. Nothing but praise from the family. It was definitely a tight squeeze on the 22.5" with SNS, but it worked fine and foil wrapping the drumsticks and wings prevented any burning.

                  Thanks all!
