    Love it. I would have mixed the two together.

    And, he has to have a background in media production, that was both stylishly shot and produced (for example, his reflection perfectly captured in the reflection off the kettle as he talked), and well performed, with just the right balance of polish and backyardishness.

I also took a minute to dash off a quick comment complimenting his VideoSkiis and Product Knowledge and Signed it From a Backyard Cremator in Fargo ND, Dan.                 You can tell the guy is a huge geek and loves his BBQ toys. The love of BBQ comes out in the videos. Puts out some pretty nice looking food to. Hope he keeps making videos.

                      I cam across him a while back at that time he only had 4 videos (he had just gotten his summit) he wasn't putting out videos very fast so I forgot about him. Thanks for reintroducing me to him he does have great production values but also keeps it real like with the 3 arrows drawn on the table one to each of the meats he just cooked and one naming him, great stuff!!

                        Being a big fan of the SnS, I wasn't necessarily surprised. I thought it was eye opening to see how much extra smoke was put on the butt by comparison, especially with only 2 small chunks.

                          For the WSCG I am wondering if ditching the diffuser plate would actually create even better results. It would be like the PBC or a Kamado where the juices from the meat are dripping onto the coals creating "grill smoke". I cooked some steaks in my 14.5 WSM with the water bowl removed. I started them on the top rack to cook 'indirect' and then moved them to the bottom rack to sear. They were excellent and were probably the best steaks I've ever cooked.

                          It's something to think about and experiment with (that is directed at WSCG owners in the Pit).

                            Yeah I'd like to hear thoughts from owners on that as well. My guess is the WSCG is so efficient that the drippings would overwhelm the lit charcoal.

                            If anything I'd have skipped the water pan in the WSCG. It doesn't need it.
