At my age, I know I don't want a stick burner so maybe the LSG high end pellet smoker.

In the little town of Brenham, Tx, about 70 miles west of Houston resides this beast. 😳

My dream cooker is always the last one I bought.

I haven't spent much time looking at the ultra expensive cookers, but among those I could realistically dream on the Hasty Bake 357 Pro is my biggest want. The Weber ranch kettle has also been a long time dream, but it's so expensive that you can get more capacity for less money by buying several smaller kettles (and I already have multiple kettles ).

I've been culling my cookers! Got a dumpster out front that I'm filling with BBQ stuff and other detritis of life. Gave away my OG last week, mainly because I didn't like the new model. On the plus side, I have a spot to put my MAK 2 Star out to use. Here lately, I've done most of my cook to order work on charcoal.

If I could justify it, I'd order a LSG pellet with charcoal insert and a Gateway Go2 and another Gateway 30 gallon. My current 30 has a hole in the bottom.

I feel good about my outdoor equipment, the only thing I am going to get (soon) is a pizza cooker.

So for me, it would all be indoor kitchen equipment. One of these years we plan to redo our kitchen, then the research will really begin.

                One word: Kalamazoo .
Fer awhile I wanted their hybrid - wood, charcoal and even maybe gas. Not sure on the gas’s.
Then they came out with the stainless Kamado. Since I been buckin fer a Kamado fer awhile also.
                Yup, a Kalamazoo Kamado.

In my dream cooker, I would like an offset stick burner but with the addition of gas/electric heat and a thermostat to maintain a certain temperature. It would be like a modern oven but with the ability to control the temperature and still use real wood- not pellets. I'm on a limited budget so had thought about converting an old gas stove we once had in Ark... Also had once tried a little project with an electric heat coil but got too busy to pursue .. Maybe one day when I win the lottery.. ha...

Many years ago, I saw a kit that added LP to a charcoal offset. They cut a ~3” hole in the bottom of the firebox, and bolted in a burner and thermo-coupler just like the ones that come with an LP Turkey fryer. I bet you could find both on e-bay or Facebook market. 👍
