    I've never seen that Fruita website, pretty cool resource. The 6" x 3" cuts of whichever of those woods looks like it'd be perfect for a KBQ if one were fortunate enough to have one!

              That's the Thermapen Air model for measuring ambient temps. Its probe is sitting in a port of the KBQ provided for measuring ambient. Works great. The KBQ was set to its highest setting here for some chicken. As you can see it's about 325, though it will swing +/- 10 degrees around that. It is a convection device though, so the effect is as though it was higher.
