    Maybe a bit corney. I love this interaction. Seeing and sharing the cooks. It's what we're about. Looking forward to seeing all the cooks and as suggested pictures of humans as Spinaker suggested. You already got a shot of my ugly self. We'll see what tomorrow brings. 🤪

      Well I woke up to thunder, lightning, and rain just a little while ago. It continues as I have my first cup of coffee. They’re saying it will clear up later this morning so I’ll get the salt on the flat iron steak and have it ready for the grill later.

      Every year, I start my July 4th holiday with this classic tune from the legendary Dave Alvin, titled "Fourth of July" amazingly enough, from his early solo release King Of California. Such a great song to be humming all day while engaging in the festivities. Heyyyyyyyyyyyyyyyyy baby!

      Cooking yesterday was a good call, as it's lightning, thunder, and pouring rain here is SWFL this morning. Should let up around 2pm, which will give me plenty of time to fire up the M1 for wings. Pulled and shredded the beef last nite and will let it simmer in the Instant Pot today. I love how the house smells when I'm doing BBQ.

      And liftoff! Plate of ribs on the kettle at 8am on the dot, as targeted, and the kettle is behaving well this morning. Smothered in Cowboy Crust and smoke from some cherry chunks. We're getting some relief from the recent weather, with dew point in the low 60s/high teens and forecast high only in the mid-80s/30ish, far better than the miserable mugginess of the past week or so.

      Current set up for the day. I’ve got the pork belly in the KBQ. I’m gonna do the glazing portion of the PBBEs on the kettle. While the pork belly comes off the KBQ, I will add the ribs.

      Cruising right along, nominal AF. Looks like we're entering Stallsville, and interestingly enough, the temps on the two probes have crossed over. The thicker end was cooler until a while ago, when it overtook the thinner end. I'm sure it'll even out in the end...

      EDIT:​ my wild guess to explain the crossover is that the thinner end is feeling the stall sooner than the thicker end, which seems sensible, since there is a shorter distance from surface to probe on that end than on the thicker end. As I write this they are both dead flat stalled, with the thicker end reading a good 15F higher... that's my story and I'm stickin' to it.

      Its on! started at 9:30am. Got some of @Meathead's BBQ Bourbon Beans cooking on the stove, will add to a pan and put under the butt when it hits about 130o or so. I really like how this post oak is burning: slow steady burn, not as fast as the local red oak.
