I had to break out the Haz-Mat 1.4 Placard as we made the drive over to Sconi yesterday for some fire works. Filled my truck bed, and my dad's work truck. We've got 248 Morters to launch and over 10,000 rockets in square cakes. (4,000 Saturn missiles alone, LFG) We got part of the finale wired up and ready for launch. This mortar rack holds 50 shots for the finale. The whole show should be about 32 mins, according to our launch app.
My brother and I were working on this yesterday, so I can focus on cooking on the fourth and he can focus on.....well...my guess is the bottom of a Coors light and the pool/lake.
Spin, I’ll let you in on a secret. Buy them ten years ago. That’s where I got mine…the last time I bought any and almost had a heart attack at how much they were. 😵😵
Not cooking for anyone for our 4th party this year. In fact I have instructed all attendees to bring their own microwaves to cook their own hot dogs and hot pockets. 😉

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
Decision made. I picked up a 2.8# chuckie today, so it's Poor Man's Burnt Ends. I'm cooking for me as my wife won't eat them and my daughter and family are heading to some Carolina Beach for a week. I'm thinking to split in half and freeze half for pulled beef at a future time. It will be cooked on the PBJ.
Not many people here this coming weekend so should have plenty of food.
We'll start meal prep on Thursday night with some simple tacos and a black bean salad (cold) and work on weekend meal prep.
Not sure how the menu will work for the weekend but these are the main items:
Grilled and sauced split chicken breasts and thighs. Probably a few baked potatoes at the same time.
Nathan's hot dogs with fresh sauerkraut one day and Nathan's chili dogs and cheese another day.
Cauliflower Salad and Best Bean Salad. These are both no-cook cold salads and easy to make.
Corn on the cob.
What am I missing?
Molson Canadian, Budweiser, and PBR. My cousin is not coming so no other beers needed I think.

And then a massive amount of ordnance. Just got done with wiring the rest of the finale. These are going to be done remotely. Most of the fuses are slow burn but on the cakes we have fast fuse so they are timed right. Now we move on to wiring up the rest of the show.
Most of it is electronically set off. We have it wired to go off with an app on my phone. We only manually light a few mortars. It’s pretty much hands off at this point. We just do t have the electrical hooked up in these pics. DaveD

Our friends in the neighborhood always have a bunch of us over on the 4th for a cookout. He does pulled pork with multiple BBQ sauces that he makes himself from peppers and stuff he grows in the backyard. He cooks low and slow on either his Weber Genesis or his gas smoker cabinet, and it's always good eatin'! He does New Years and Halloween as well, which is also lots of fun. Oh, and he's got a projector and screen set up in his garage, and does summer movie nights outdoors. He gets to pick the movies, but since he's seen EVERYTHING, he's always got good ones I haven't even seen. So we try not to miss out when we get invites.
And the 5th is my wife's birthday, so we will be going up to Lake Erie for the day. I don't think I'll be able to pull off a cook this year, unless I manage to squeeze it in on Sunday. I do have ribs to cook, so maybe I'll start thawing those out tomorrow... We shall see...
Not cooking this year. Cookers packed. House packed. We’ll be driving across the country to our new home, and if all goes as planned should be in Albuquerque for the 4th of July!
Wow, didn't know you had this move in the works! We lived in ABQ for 8 years and it was mostly great (our house was burglarized during our time there, a definite black mark). Warning, I have never seen worse drivers anywhere I have ever been. Mind-boggling the decisions people make driving there. And at a signal, "green" means look both ways and make sure everyone has finished running their red lights before you go. I am totally serious, it does NOT mean just "Go" - you'll see!
For the 25 th year in a row both of us will be helping with our Trout Unlimited Fishing Derby for kids 12 and under. They get a t shirt and Parks and Wildlife will give them a rod and reel if they don't have one. We are leaving for a camping/fishing trip so we need to get lots done when we get back home. Probably simple Chilli Dogs on the grill. Happy 4 th everybody !!!
