      Awesome! I'll be at the beach the next 4 days, but will likely do a freezer dive and find stuff that needs cooking on the 4th, rather than buying more meat this time. I know there are steaks, kalbi, tri-tip, picahna, and all sorts of things that need to be eaten up...

        We are planning on a huge family and friends party at my Dad's place. I have gotten several requests for pork belly burnt ends, so I will be making those. Along with some bacon wrapped Oreos. I am still undecided on whether or not to make a large protein for the holiday or not. If I do, I think it will be brisket or ribs.

        I'll be doing my cook a few days in advance. Leaving on 3rd to head out of town for the 4th but will be bringing some BBQ with me

        Likely will do a few racks of spare ribs and korean style smoked pulled beef with some pickled veggies to serve with the beef (likely on slider rolls). Might add one more random item because I usually can't help myself so we'll see how this may change.

          I'll be out of town so I'll try and do something early. I have some pork butts in the freezer, I haven't done one in a couple years come to think of it

            I wanted to bump this up to make sure people see it. I know it can be stressful to cook for family and friends, we do not want to add to that. This does not need to be fancy or official and you do NOT have to post a picture of your self, if you do not want too. (It just makes it more fun)

            More than anything this is meant to be fun for all of us to see what people come up with on this great holiday. (My favorite for sure!)

            Let us know what you are going to cook. And what festivities you will be attending or hosting.

              Thanks for the bump. I'm leaning towards burnt ends. Either brisket or Poor Man's version with a chuckie. And I'm not shy with pictures of me. Here's one wearing a Patriots hat. Does that count as patriotic?

                I've got a couple of racks of ribs in the freezer that I'll throw on the kettle. No big get-together, just hosting our neighbors' 17 year old daughter who has to stay home to work while the rest of the family goes on vacation. I think ribs, mac and cheese, and roasted broccoli (the neighbor kid's favorite) should do the trick. SWMBO will, I hope, make her amazing peach and creme fraiche galette.

                Cooking both the 4th and 5th...The 5th is our 45th wedding anniversary! Thinking some decadent for the 5th, like waygu steaks and crab cakes. Even as I type this I find I have to double-check the count since it can't possibly be *that* long ago.

                Not sure what I'll make? I might try an overnight Pork Shoulder in the BGE. I've never done one overnight.

                I have a Costco briskie that has been wet ageing for a bit. I would love to doit in the stick burner. We will see what shakes out.
