    In honor of our Pitmaster Friends who have gone before us and challenged us all to be better cooks I made Duroc Bone-in Pork Chops, Baked Beans with Pork Rib Meat, Green Beans, and Salad. Chops were reverse seared on the BGE with SnS Charcoal Basket. RIP peace Pitmasters!

      Game on! The small thing at the left is the very meaty chine bone from the large rack of ribs. Seasoned with the Asian rub I'm using for the Sriracha Gochujang ribs. Pork belly and other rack of ribs (original weight 6 lbs, after trimming 4 1/4 lbs) are seasoned only with S&P. I'm using the OKJ Longhorn offset with red oak.

        Thank you all for the comments. Rub used was Suckle Busters' Meat Candy that we all got at the last Meat Up. B&B charcoal, apple chunks, spritz with 50/50 ACV and apple juice. Now
        wrapped as I watch Michigan and Texas A&M. Thanks to Clemson, Georgia, Louisville and now
        St Johns' my bracket is busted so out comes the Buffalo Trace....

        Couple of St Louis racks. I used Meat candy on one and sublime swine on the other; both rubs we got at the fall meat up. I really like the sublime swine; it is a little salty but a light coat followed with some mmd would be fire. I thought about beans, but decided on collards and cornbread. With some chow chow and a Founders Backwoods Bastard. For our guys.

        Smoked chicken wings and chilli for the memorial weekend.

        More importantly, I was telling my brother a story about Mr. Bones love for the smokey joes and jumbo joes, and how many he had from Facebook.

        Brother spend about 3 mins on FB to find a brand new, in box, smokey joe for $30.
        He definitely doesn't need it. I bought him the same size SnS for a house warming gift.

        There is no cure for MCS

        Thinking about Ernest-
        1) his man-fil-a chicken sandwich was phenomenal!!
        2) I think I gained 20 lbs just from his pictures. He had an amazing knack for posting in the "what are you cooking thread" immediately after me!
        Nothing makes you look worse than having your food right next to his.

        Houston ain’t much on scenery like a lot of you folks have, but damn, I can get pretty much anything I need within 10-20 minutes from home …..including a Wild Fork Retail Store. 😋 2 1/4 lb choice porterhouse…1 3/4” thick! 😳 Reverse seared with some hickory and a baked tater. Yessiree!
