Got my plate o'beef ribs trimmed and salted today and staged the SnS kettle, it's ready to light. I should be able to fire up by 7am and get the ribs on by 8 or a little later. We've got some colder air back again, so temps no higher than the mid-40sF/7ishC the past couple of days, and it will become increasingly cloudy as the big pulse of rain that's on the way starts to move in. Should be dry until nearly midnight according to the latest forecast though, so I should be just fine.
Fine lookin' slab o'meat right here... (Creekstone Prime, so you don't have to scroll back!) Trimmed off ~13oz/370g, and have neglected to weigh it yet, will do before it goes on tomorrow.
