    I am not ignoring this but my son has his state robotics championship during the memorial cook weekend. It is a multi-day event about 1.5 hours away so no chance it do anything unfortunately. Hopefully he will qualify for the world championships for the third consecutive time.

    Needless to say, I will be one of those dedicating a later cook to our fine departed friends.

    I was going to do an SVQ pastrami but my SV bag leaked.....

    Figure Mr. Bones would want ribs.
    And if I'm gonna fire up the PBC..... Might as well do several racks.

    Set my beef ribs to slack out…..I have white oak (💕💕💕), hickory, applewood and pecan. Thoughts? I will make a special trip to The Woodshed to gather provisions. Smoked Transistors have you been? They are off Batavia road by angel stadium.

      I have not but i had a coworker kindly purchase 3 bags of smoking chunks for me as a gift from the Woodshed. Almond, Post Oak, Pecan and it was perfect sizes and great quality. I know Harry Soo stops there frequently to visit Patty (the owner) sells his bbq rubs and sauces too.

    Looks like high winds and snow here Saturday at cooking time but I'll do my best. Unfortunately that is the only day this weekend that I can cook.

    I've rearranged my sched to take most of Friday off as personal time, and will fire up for these here Prime chuck ribs from Creekstone (just out of the freezer in this pic, still need trimming):

    I do not have plate ribs, but my BIL cuts some myTfine beef ribs off the ribeye roasts he sells. At $2.99 lb I cannot pass on them.
    Usually 3-5 lb packages. I will do some of those and Bonesy chili.

      I was in fer a brisket fer Fri & Sat. I am now going to be gone up Nort those days & definitely tied up Sun. My goal will be a week of delay.

        Found a new butcher shop today...Jimmy P's in Naples FL. Doing beef ribs and Berkshire pork baby backs. Going to use the Stump's Baby...no wood for the KBQ. May also throw a brisket point in there for good luck.

          I’m on the fence. We are expecting rain Sat. too, but it rarely rains here in St. Pete unless it is covering the entire area. Either way, this weekend is a smoker weekend. 👍👍😎

        I got a nice rack of St Louis cut from the freezer. I don’t know where these are from, but I’m pretty sure I didn’t trim them; they’re too nice! Anyhow, I’m still thinking about them. I got it pretty well figured, but you know how it is.
