Smoked Spatchcock Chicken and Prime Ribeye. Two of my kids and my daughters boyfriend over to celebrate my birthday with me. Family, good food and wine, and it couldn't have worked out better.

I didn’t mean to lie. Well, it wasn’t an actual lie, just a miscalculation. When I posted my first cook on the plow disk, I said, breakfast next. Then I was in Costco in the meat section and on impulse bought a 3# package of the marinated skirt steak which we really like. So here’s the result of the steak fajitas on the plow disk. I bought the lid for covering and keeping warm. I also got the trivet to set the disk on for serving on the table. It was quick, easy, and really good, but I missed the Weber charcoal flavor. Maybe breakfast next, but no promises.

That’s beautiful! I love good fajitas. Do you squeeze some lime juice on yours near the finish?

A staple in the JCBBQ household. Cutlet, arugula and starch- Israeli couscous today.

Love arugula! Simply dressed with good olive oil, couple splashes of balsamic, s&p, shaved pecorino Romano cheese.

SheilaAnn yup! Everything here but the cheese. Michael_in_TX Its probably the lettuce I eat the most. It provides such an easy and distinct flavor counterpoint.

Threw some pork tenderloins on smoker for a little while then seared afterwards. Served with baked potato and green beans w/bacon. Sorry don’t have a plated picture, forgot it.

Me and my kids love squid. We eat it all the time. Tonight I battered it in tempura and served it with a sweet and spicy chili dipping sauce.

            Yes, please!

Tried something new - poached cod. Warmed the olive oil and let it sit w the aromatics to flavor the liquid for about 45 mins. Added the cod and kept it between 115-125 degrees. Note to self: cut those taters bigger so when you miss-time the cod and turn off the oven, they don’t turn to charcoal 🙄 Simple Bibb lettuce salad was good.
