Game day wings & bourbon. This was supposed to be a 12:30 game-start meal, but I was late getting things going and it's cold and windy here and I lit my summertime charcoal pile instead of my winter one (that's my excuse to my wife anyway).
Moore's Buffalo sauce and ranch, wings cooked over B&B charcoal (no wood) out in the blustery wind and snow flurries. Buffalo Trace in the glass.

I decided I didn’t feel like having turkey and my wife didn’t want roast beef. So we compromised. A smoked turkey breast from Wild Fork for her.
And a boneless rib roast to SVQ from Creekstone Farms for me.
The turkey was nice and juicy and the roast was a perfect medium rare.
The meats were accompanied by stuffing and a salad (not pictured). And a 2019 Cakebread Cellars Cabernet Sauvignon . This is one of the last bottles from our day in Napa last year when we spent more on wine than we do in a typical year.
All told it was a delicious meal. Hope everyone else is enjoying a happy Thanksgiving.

My only responsibility this year was the turkey. Between my wife, kids, parents, sister and nephew and his wife we had maybe 15 sides, 6 deserts and a 10 pound ham as well as the turkey I made! And my son and his wife didn’t show up due to being sick, shorting us a couple more dishes!
I spun this 19 pound bird on the kettle rotisserie on my Weber Performer Deluxe, as seen elsewhere on the pit where I discuss a trussing issue.
Once done it went inside for carving….
totally busted it up!
I hope everyone had a great Turkey day! I am slipping into a diabetic coma…. After another round of seconds, more dessert and a draft beer….

Modified Turducken Adventure
My concept was to wrap chicken breast and dressing into a duck/turkey loaf and wrap it in bacon.
It turned out tasty, but where I went wrong was that I made the meatloaf as a four pounder instead of a three pounder like I'm used to doing with BBQ fatties. I allowed a 2.5 hr cooking window and I had to leave to go to Thanksgiving before I could get the internal temp up to a safe level.
So, alas, my well-conceived plan wasn't able to be played out to actually feed people.
It was a fail, but it was also a learning experience and next time I'll get this pulled off!

fzxdoc I cooked it for 2.5 hrs and the internal temp was not high enough I went to the Thanksgiving gathering without the turducken, came home without knowing what the final internal temp was. I cut it open and tasted it. That chicken was as tender as could be and had a nice smoke flavor. Next year I'm nailing this and I'm going to add color with roasted red pepper!

The panettone was super moist, I gave it a light toast before adding the custard base. Didn’t need to. My cranberry sauce is straight outta an OG Martha Stewart cookbook. I’ll gladly share if anyone wants. It makes a lot! So I portion and freeze. Won’t have to make it again for a few years! Unless I give it away or do a large catering.

Went halfsies on the ultimate turkey recipe, because I didn’t feel like making the compound butter. Ankle was bothering me the day I was doing turkey prep, so I passed on it. But did make the citrus-herb salt in a molcajete, and was able to give it a full 24 hour dry brine.
smoked on the SNS kettle with couple chunks of guava wood. Still learning the kettle, so had a bit of uneven heat, that required a bit of movement to even it up. But it came out great in spite of myself.
Absolutely delicious. Skin was crackling and on point. Very moist light meat. Raves from all attendees.
