    SUWYC 2023 - A Yearly Recap

    I thought it would be fun to drag out your one or two favorite cooks you posted this year in SUWYC. Doesn't necessarily need to be what other folks thought of your creation, just what you and your family enjoyed the most. Here are a couple looking back that we thought were worth cooking over again in the seafood and beef categories. Let's have some fun with this !!

    From my Cajun Series, a delicious Stuffed Flounder. This dish is done on a regular basis in the Troutman abode.

    ...and although I don't cook these very often, I definitely go with the Akaushi American Wagyu Brisket , best I've ever cooked.....

    Great idea Steve! This year was a year of trying new things, especially foods and spices from Lebanon/Israel/Egypt/Turkey and North Africa. Second to that was new ideas for brisket and following that was new Asian ideas.

    Oh heck yeah, I'll play.

    Most memorable pork was our first pork belly. Cooked it low and slow on the SnS kettle with B&B and apple chunks. Absolutely stupendous.

    Honorable mention to the Wild Fork double-bone pork chops, done SVQ twice now, also indescribably delicious.

    Most memorable beef is a tough call, but the winner is another SVQ meal on a Prime tri tip from Creekstone. All day in the meat jacuzzi at 131F/55C then seared over raging KBB.

    Most memorable poultry, hands down, was the Thanksgiving turkey done in the Pit Boss vertical pellet smoker. My only slight regret is that the skin didn't get quite as golden brown as I wanted, but it was amazing!

      I gotta dig up that hot dog cook of mine with 4 temp probes...maybe that wasn't this year. If not I'll try to repeat it in the next day or two.

        Shackflyer - I brown it as one of the first steps, then take off the pan and get everything else going. Once the rice and liquid are in the pan, then I nestle the chicken back in to finish cooking, making sure the skin stays above the rice to stay crispy.

        Here’s the step by step post of how I cook my paella. Let me know if you have any questions.

      I just deleted a bunch of pics from my phone - end of year cleaning. But I do have pics from the epic, 60 some odd racks of ribs and who knows how much chicken from our family reunion in July

        MsTwiggy Thank you! The fire pit is at a rustic boat-in campsite in the UP of Michigan which FireMan and I and a couple of my kids fine tuned for a steak cook. I love that pic.
