Grilled deep ocean royal red shrimp on duck fat fried white corn tortillas, pico de gallo and a swipe of chipotle aïoli. Oh boy love that aioli! 😛
After spending hours in the kitchen today, preparing tonight's meal, I couldn’t wait to share this masterpiece with The Pit!….eagerly awaiting pics to be featured in the next Hot From The Pit!

Lots going on at this house today with the holidays upon us.
First up, another pork belly which will be ultimately rendered into PBBE tomorrow.
Call me a one-dimensional kinda guy, but I love the Meat Church Honey Hog Hot Rub. It forms a great bark and tastes amazing.

Mari Jo also made some of ‘Bompa’s fudge, named after her dad, Aaron, who her daughter called Bompa for grandad.
I baked some stollen and shaped it like a complete rookie. Maybe that’s why the originator of the recipe decided that a 1” layer of powdered sugar was essential…for rookies. 🤦
And last, but not least, I made some cheese straw dough to be made into straws and baked off tomorrow.

Started Thanksgiving cooking yesterday. Baked a pumpkin pie, nothing terribly exciting there. My DD and I concocted a cranberry sauce recipe that is now our go-to. Here we are the next day:
It might not look like much, but it is really good. It has:
Cranberries
Sugar
Water
Key lime juice
Crystallized ginger, cut into tiny pieces
Cinnamon stick
I'll codify it at some point and add it to Paprika, but now I just wing it.

HotSun it turned out pretty good. I rubbed softened butter all over it and seasoned it with no salt Tony Chachere and some Voodoo Seasoning from cookingwithcajun. No after cook pics cause we had a crowd waiting to eat
Retired, living in Western Mass. Enjoy music, cooking and my family.
Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
This all I have. 25# 'er out. Basted one more time and covered about an hour. White meat at 170 and dark 185. It was delicious along with all the fixin's. I hope all are/will have a Happy Thanksgiving.
Turkey breast on the Kettle with green bean casserole, box stuffing, mashed taters and gravy. And I almost forgot the homemade roll that somehow disappeared before the plated photo. I tolerate turkey once a year, but SWMBO thought it was great. At least I managed to get it tender and juicy with a crisp skin that softened a bit while resting.
I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.
I took them off the grill at 155. Thermos didn't pop. One was fully cooked and there were parts of the other I had to carve around and throw in the fridge to get cooked more tomorrow. That's what I get for being in a hurry and confirming with the Thermapen in multiple spots.
