    After a long summer of college tours with my son we were finally home to smoke some Bourbon and Honey Glazed St Louis Ribs and Molasses,Maple,Bourbon glazed Elk,Bison and wild Boar meatloaf.

    Simple but delicious tonight. Some brats from Costco and peppers and onions for my wife. I hate peppers and onions for the most part and am more than happy to cook her some up outside so it doesn't stink up the house.

    The kids have had brats before and I don't remember them disliking them but there were more than one upturned nose. Just meant I got to eat a bunch of their leftovers.

      Wow! My kids would take a brat over a hot dog any day of the week, both when they were little tykes, and now as adults. My wife is the picky one. Mostly as she thinks the brats HAVE to be more unhealthy than her preferred Nathan's all beef hotdogs. And she is probably right!

      jfmorris My kids, especially my 9 year old daughter, would eat regular hot dogs every day of the week if she could. There are a few types of sausage she is OK with but she really didn't care for bratwurst.

    Skirt steak was on sale, a couple months ago, so I bought a lot of for a tailgate. I'm experimenting with marinades, and used Mrs. Skinsfan as my guinea pig last night. We really liked the way they turned out.

      I smoked a 1 lb sausage chub for 30 minutes on the Weber. Just enough time to perfume the outside but not cook through. Finished in the pan like normal sausage gravy.

      One of my favorite days of the year…The day captain Sam delivers my annual Salmon Share! 22lbs of wild, sustainably caught Bristol Bay Sockeye Salmon. I will be mustard and maple glazing and smoking a few filets this weekend!

      A little Tuesday Night Improv...Pork Tenderloin Medallions, Sautéed mushrooms, White Wine, Sage and Butter Sauce served over Wilted Arugula Spinach Salad Drizzled with a Nice Italian Vinaigrette. And oof course....Steamed Artichoke. Oh Yeah!!

      Having my griddle next to my wok burner means it's really easy to fry up fries or tots to go with burgers. That wok is a real game changer on a few levels.

        My .02 is I was deep frying one evening and spilled some grease on the balcony ( standard deck boards ). The only solution I saw was a strong solution of dawn and hot water and a stiff scrub brush. Well, it worked.....
        Now I had a clean spot, which pissed me off, because now I had to do the rest of the deck to keep it looking the same.
        No good deed goes unpunished......

        BTW, awesome looking tots!!

      Beautiful day here today. I got out the Gabby’s Grill and cooked a Santa Maria style tri tip. The tri tip was ry brined with salt overnight and then I added black pepper and granulated garlic a couple of hours before the cook. I cooked it over a post oak fire and basted it with garlic infused olive oil throughout the cook. Served with chimichurri and a side salad (not pictured). Delicious!

          Oh my, the knock you're hearing on the front door is me !

        This is Michael_in_TX 's fault: Thai Basil Chicken. I've never made this before but I used to eat it at a restaurant in College Station in the 1990s (restaurant is closed now) and it was my favorite item on their menu. I'm going to start playing around and see if I can reproduce their flavors. For this attempt I combined elements of two recipes.

        Final product was good (and Hot!) but not the same: too much soy flavor, not enough sweetness, too salty. The recipes call for light soy sauce and I don't have any so I used regular. The sauce for my recipe also had 1/3 cup chicken broth - I didn't have low sodium per the recipe, I used Better Than Bouillon. I used honey instead of sugar.

        So, next time I'll use light soy sauce (and less than the amount the recipe calls for), low sodium chicken broth, and more honey (or switch to sugar).

        Having said all of that, it was really good.

        Mise en Place: thin sliced shallots, thin sliced basil, some green onion tops left over from Yakitori yesterday, chicken, the sauce, and pounded Thai chilies and garlic in the center.
