SWMBO has a nasty cold and therefore (of course) informed me a couple of days ago that I would be serving (not smoked) corned beef last night. Naturally, I agreed:
All was well until I was informed that the aforementioned corned beef (sous vide at 150ºFx30 hours ... then roasted for about 20 minutes with a brown sugar/mustard/clove glaze) would be served, thinly sliced, over plain Kraft Mac'n'Cheese ... in her favorite bowl.
There were no pictures beyond that point ... 😐 ...
(To be honest, it was surprisingly good ... but it's way more fun to just bitch about it)

I did chicken wings last night. Matt Pitmann (Meat Church) says that his Holy Voodoo rub is his favorite wing seasoning so I gave it a try. I've been trying to figure out what I think of that rub. It's described as cajun, but it doesn't really taste cajun to me. It's very fine, salty, and MSG-forward, with some dried jalapeño in it.
Here are the wing dusted up before a overnight dry brine....
And, of course, the only way to cook wings is with the vortex with pecan wood....
I did them three ways....plain (with Holy Voodoo), traditional buffalo, and Bachan's Japanese BBQ sauce.
All three were really good. And I do like the Voodoo on wings. But the Japanese ones were outstanding. Easily my favorite of non-buffalo wings I have ever had. Incredibly good!

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.
