How do you like that rub? Have picked it up and then put it down at least 3 times at Buc-ee's.

Texastweeter…it is our go to for anything beef. SWMBO is very picky and I received it from my secret Santa a couple years ago and she fell in love with it.

Stuffed minced meat seasoned like a Cevapcici.

texastweeter yeah, give me a chance to see how well I can run at 200 for sausage smoking in September

SWMBO has a nasty cold and therefore (of course) informed me a couple of days ago that I would be serving (not smoked) corned beef last night. Naturally, I agreed:

Click image for larger version Name:	IMG_3023.jpg Views:	0 Size:	1.82 MB ID:	1416937

All was well until I was informed that the aforementioned corned beef (sous vide at 150ºFx30 hours ... then roasted for about 20 minutes with a brown sugar/mustard/clove glaze) would be served, thinly sliced, over plain Kraft Mac'n'Cheese ... in her favorite bowl.

There were no pictures beyond that point ... 😐 ...

(To be honest, it was surprisingly good ... but it's way more fun to just bitch about it)

That was a very mild "gripe."

Lemon confit. Not so exciting in and of itself, however, I’m endlessly hopeful that it’ll add to my quest for perfect summer chicken. 🤷‍♂️

Gimme some tortillas and salsa verde, maybe some diced radishes, I'm in!

I did chicken wings last night. Matt Pitmann (Meat Church) says that his Holy Voodoo rub is his favorite wing seasoning so I gave it a try. I've been trying to figure out what I think of that rub. It's described as cajun, but it doesn't really taste cajun to me. It's very fine, salty, and MSG-forward, with some dried jalapeño in it.

Here are the wing dusted up before a overnight dry brine....

And, of course, the only way to cook wings is with the vortex with pecan wood....

I did them three ways....plain (with Holy Voodoo), traditional buffalo, and Bachan's Japanese BBQ sauce.

All three were really good. And I do like the Voodoo on wings. But the Japanese ones were outstanding. Easily my favorite of non-buffalo wings I have ever had. Incredibly good!

I keep hearing good things about Bachan's.

After all that ‘cue this weekend, I was only able to waddle down to the lobby and grab this for dinner in my room.
