      Made some Pork/Beef Sausage this week. A simple Salt and Pepper seasoning with Milk Powder Binder, and Cure.

        I wasn't about to let a little norovirus stop me from cooking for family on Thanksgiving. I ended up going with two 21lb. turkeys (dry brined), eight pork tenderloins, two loaves of bread, and enough mashed potatoes to choke a mid-sized yak. I was told things turned out well (still didn't have much of a stomach that day). However, the skin on the turkey breasts split, which made for a less than stellar presentation.

        My apologies for the quality of the photography, as I was happy to simply be able to stand upright most of the day - which was a far cry from 48 hours earlier.

          Holy crap (pun intended) Batman, if you did all that while under the influence of a norovirus. I couldn’t make that kind stuff in perfect health. Nicely done and I’m sure your family appreciates the sacrifice.

        Smash burgers and hash browns. I’m really enjoying hash browns on the griddle much more than a side of French fries.

          Thanks guys! Stupid mistake…see the picture above with the 2 burgers side by side? Look closely at the one on the right, see the cheese slice in the middle. I accidentally left the paper on one side of the cheese slice that separates the slices in the package. 🙄 I was eating the burger and bit into something and I was like…WTF? 😳

        Grilled cheese with turkey, served with tomato soup. I was cold after my bike ride tonight and wanted something warm and hearty….. this hit the spot.

          WayneT - it’s the Canyon brand GF bread, so probably a mix of flours. It’s really good grilled, toasted or just plain ol out of the bag with some PB&J!

        Well, after days of eating delicious pulled pork, I needed something different. I know we have some CPM (Chili Pepper Madness) fans on here, so I decided to do his spicy ramen recipe: https://www.chilipeppermadness.com/r...ramen-noodles/

        This is no where near authentic, but it is so very tasty! (And SPICY!)

        You start with five cups of chicken broth, and then add gochujang, garlic, seranos, hot chili oil, sambal oelek, sriracha, soy sauce, and ginger. Let that simmer and infuse for about ten minutes. Then add ramen noodles and ten shrimp. Let cook for another five minutes and serve.

          Looks delicious and you nailed it on the egg. SheilaAnn you can cheat and do the eggs Sous Vide. Super easy that way.

          Good Stuff. SheilaAnn 6:45 gives me completely cooked whites and a liquid yolk. 8 minutes give a mostly jammy yolk 8:30 completely jammy and at 10 minutes completely cooked. I put eggs right into ice bath after boil as mnavarre does.

          Lemon chicken soup with gf pasta. Mt DIL eats gf ergo the gf pasta. I normally use orzo but couldn’t find gf orzo.

          barelfly If you like lemon chicken soup with pasta, this will punch your ticket. I’ll do a recipe swap with ya! Seriously, pm me one of your favorite gf dishes please. I want to make it for me DIL.

            And, I saw GF Orzo somewhere this past week. Just have to remember where that was

          Another great night down at the sauna. It was 30 F, which is about perfect. Water in the spring was running at about 37 F and the sauna temp was 200 F. Great night for fellowship.

          In the dutch oven we had pork belly and shoulder. Onions, garlic and a ton of spices. All pre-smoked then braised in stock for a few hours until the post-sauna feast. Fixin's were radish, guac, pickled onions, seranno peppers, table creama, radish, cilantro and fideo.

            I have actually thought about sleeping in there from time to time. After we are all done, I throw a bunch of menthol and birch oil in a bucket with some water, then douse the stove with the bucket. The steam is so strong that you have to stay the heck outta there until it clears. However, once it clears out, you get a fresh, clean smell. WayneT MarkN

            Once I am cooled down, after my last dip in the spring. I head back into the sauna, after the door is left open, once it is down to about 150 F, I change in the sauna before dinner. (Usually it is in the single digits in the winter so a change in the sauna is nice!) Anyway, more than once, I have wanted to just climb back in and go to sleep after eating one of these meals. LOL WayneT MarkN

          Baked a dozen loaves over the last two days. Here are 7 or 8 of them, a few went out the door before I could get photos. The cranberry walnut was for my bride.

            As usual, you’re killing it. I think this post just may be the inspiration I need to make some cranberry walnut bread. I haven’t made it before but have the PR BBA version available. Do you have a favorite recipe?

            WayneT I don’t have a recipe, I used my regular loaf, and every time I loosen it up and stretch it to roll it back up I just add layers of walnuts and dried cranberry’s. I’ve learned to be fairly generous with each, but I don’t have measurements, likely 3/4 to a cup of walnut pieces, and maybe 3/4 plus of cranberries.
