      I have some venison smash burgers coming up soon. I use bacon grease. Try tossing the tots in rendered duck fat and seasoned salt. I discovered that trick while on a business trip to Nashville, never go back to regular tots.

    Pre-hunt tacos

    I typically make these in the wee hours of the morning before waking the rest of the family to head out to deer camp. Home made tortillas from the night before (I used some made by one of my employees grandmother this time, she needed some extra Christmas money), colby jack cheese, bacon, and eggs with heavy cream, seasoned salt, black pepper, chili powder, and Mexican oregano. I make the bacon on a rack in a sheetpan while I let the scramble concoction come up to room temp, then cook the eggs in the bacon grease. They get assembled and wrapped in foil. The packets go back into the oven that is still warm even though it is off to melt the cheese. Normally these are stashed in a lunch pail and passed out on the ride. Momma is in Ft.Worth Christmas shopping so they were breakfast this morning.

      Thanks tweeter. I figured as much. I've pretty much got corn down but next I think I'm going to perfect flour, then a flour/corn mix.

    Rumpsteak, seasoned with sea salt, black&red pepper, porcino ( yellow boletus ) sauce and tomato rice with mozzarella

      This is my family’s favorite meal hands down. It is the meal we celebrate with and the meal we use rate new to us restaurants.

      Ribeye w/ sautéd mushrooms, baked potato and asparagus.

      Its the meal I made to win my wife’s heart and the meal I’ve always prepared when a new boyfriend or girlfriend of my kiddos was brought home for the first time.

      Its the meal asked for on birthdays and any other reason that can be thought of.

      This is happiness and family on a plate for us and I so love to cook it.

      I haven’t had a good filet in a while, so I thought I’d do one tonight served with some cold boiled shrimp and oven baked taters. I love Costco steaks. My parole officer said it was one of the best meals he’s had in ages!

        Pork belly burnt ends to start, ribs and pulled pork over smoked potatoes as the main course, and two smoked pecan pies for dessert. I will cover the crust with foil next time but the rest was great.
