I really like my SnS Master Kettle. The only gripe I have is the ash sweep partially covers one of the vent holes. That’s just being picky. I have some beef short ribs plugging away as I type this. Gonna be yummy.
Thanks au4stree ! I just went out and checked mine. Are you talking about the 1” smoke hole, where you could insert a fan? My smoke hole is a good 3/4” to 1” above the top of any of the sweeper blades. That’s the only hole that’s near the sweeper blades I could see. The only other hole is the one for temp cables, and that’s up near the top, well away from the ash sweeper blades.
Negative, it’s the holes that ashes fall through and provide ventilation. I guess it isn’t entirely covered up, but should a piece of right sized lump fall it’ll get caught and obstruct the sweepers. Again, that’s me being super picky. Love my cooker and the beef short ribs were delish.

That is one nice grill. And much respect for doing all of that in the heat and humidity you have right now. It's just starting to set in up here and I was sweating my butt off just doing a simple oil change on my wife's car today.
The only grate I can think of is an elevated grate for additional food maybe. The grates that come with it are excellent quality! 1. Rotisserie maybe? I’ve got one but rarely use it. SNS makes a rotisserie for their own kettle, other rotisseries won’t work, such as the Weber. 2. A drip n griddle maybe or a plancha? Cast iron or carbon steel works best if using it as a griddle.
