    How much can fit on a WSM 22?

    Wife forcing me to buy a WSM 22 by volunteering me to cook two whole packer brisket and two pork shoulders. (I've been quite satisfied with my two 22 kettles)
    Hopefully I can fit the brisket on the WSM... and use kettles for pork.... sound right?

    Yeah, those two briskets should fit just fine on a WSM 22 .... "forcing" ... hehehe

      scottdware I always use water in the pan. The water keeps the cook chamber temp controlled and humid.

      ecowper another added benefit to the water is it acts as a heat sink. This allows for the vents to be more open thus allowing more air to the wood so it burns hotter. The more air flowing to the fire the better odds of achieving thin blue smoke.

    I agree, you should have no problem at all fitting two whole packer briskets on the WSM 22.

      I think you could easily do 6-8 pork butts. I've done a spatchcocked 20 lb turkey. 6 racks of back ribs laid flat. 2 plates of beef ribs looked lost on the top grate. A single chuckle is sad on their all by itself. 12 pounds of pork belly wasn't a big issue. With rib racks, I bet I could get 12 racks of ribs on a WSM 22 no problem. 8 chickens would be easy.

      2 briskets, like vwskirch wants to do won't be a real challenge.

      I'd highly recommend that he do a couple test runs and learn how to hold steady 250F temps on it. Smoke a chuck roast and make some chili with it. Or a couple slabs of spareribs because yum.

        Yes I have two and a half weeks to try and break it in, and plenty of charcoal..haha

        Just FYI ..... a brisket cook takes an entire 18.6 lb bag of KBB ..... that will give me about 14 hours worth of cooking time at 250'ish.

      Here's a picture of that 20 lb turkey on there ... it was kinda impressive on the WSM top grate.
