So, the Hasty Bake idea started while watching Dean Fearing's BBQ Stars video, never mind that he violates Meathead 's advice (soaking wood chips, salting just before grilling...), then I remembered that Meathead really liked the HB, and then it really caught fire whilst I was looking through Santa Maria stuff. Against all standard protocols here, I share a Hasty Bake work around. This past fall I discovered that there are HB clones, perhaps house brands. Adjustable charcoal grate via crank, a door to add fuel, a drawer to catch ash. Locally, have seen at least 3, range from $80-150. I picked up one as new, perhaps unused, for $125. On local Craigslist/Facebook Marketplace.
My impression is that the sellers do not realize what they have. I have no experience with HB, so cannot speak to build quality, but the unit that moved in here seems pretty solid.
