    WSCG E6 or something else?

    Hey fam, I’ve got an interesting opportunity to change up my grill line up. I got a used PK360 and added a Santa Maria attachment. I love the Santa Maria, but otherwise it’s not been my cup of tea. So I’m selling it with plans to replace the Santa Maria component in the future.

    With the proceeds I have the opportunity to get something new. I was intending to get a griddle? But the opportunity for a used WSCG (E6) with a ton of accessories. (grill grates, rotisserie, SNS with drip pan, and elevated rack).

    Like most of us the MCS is bad, so I already own a nice LSG offset, a pit barrel, small pellet popper, old gasser, and a pizza oven. But I don’t have a griddle. I miss my old Weber kettle (gifted to my dad). So when I saw the WSCG come up I was very interested.

    What are y’alls thoughts? Sweet deal on the WSCG? Or griddle, since I kind of have all the other bases covered?

    Griddle it up!!!!! I love cooking on my griddle! Probably use that more than anything else these days (between gasser, kitchen gas top, and the kettle). So versatile and fun to cook on. That’s my opinion at least.

    You have a great lineup, so just depends on what you want out of each I guess.

      You have a lot of good cookers. A man after my own heart. I have a bunch too. Among them all, I probably cook the most on my Weber kettle performer with gas start. I have been cooking on the Weber kettle for 40+ years. I know, I am showing my age. The Weber is the most versatile cooker I have. It is a fantastic 2 zone griller and rotisserie. Does a good job smoking although I usually go with my KAT vault smoker or MAK pellet grill for smoking.

      IMHO I don't understand the need for a dedicated griddle. It is a one trick pony that can be duplicated by a couple of large fry pans or a sit on top griddle for your gasser. On the other hand, the WSCG (E6) will give you a lot of good capabilities. Grill wonderfully, large cook space when you need it for a crowd and, by most reports, it is a pretty capable smoker too. And you could always throw a griddle on top if you want to do those smash burgers that are popular now.

        Well the obvious answer is to get both!! But if only one is in the cards, I vote for the griddle. I have one and love it. It’s so versatile. I love the quick and easy cleanup after a cook too.

          The WSCG is a nice unit.

          I have a Weber Performer, a LBGE, and a Pit Boss griddle. The griddle has gotten probably 90% of my summer cooking over the past two years. It opens up a huge range of possibilities beyond just cooking meat.

          I have to counter briano52’s characterization that a griddle can be duplicated by large frying pans. I have large frying pans; they are no substitute for the huge area provided by a griddle, let alone the ease of moving food around. FOUR 12” cast iron pans have a surface of 452 sq”; a 3 burner Pit Boss has a surface of 536 sq”. And then there’s the problem of finding room for four 12” pans! It’s a work flow solution, not a purpose solution. The griddle changes what you cook, and then how you cook it.

          The griddle insert for a gasser, I can’t speak to; I’ve never used one. But I did seriously consider that, to the point of comparing different manufacturers, features, costs, and even adding one to the cart a few times before deciding to wait, eventually purchasing a dedicated griddle. My reasoning had to do with what I used the gasser for: mostly quick burgers and hot dogs, and an occasional chicken thigh or breast cutlet. Those can go on the griddle, or, if I wanted the open flame taste, on the Weber. So I actually came to a different conclusion than Brian did, based on the same facts: that the griddle was more versatile and the gasser was one-trick! But that just means that he and I see it differently, and cook differently, and that our work flows are different. Both answers are right, because we are different. Chevys, Fords, Hondas. Sedans vs SUVs.

          I decided against the griddle insert because I was concerned about a “worst of both worlds” scenario: it would cost money and be less effective than a dedicated griddle. A big part of griddle use is grease management, not just using it for flavor and lubrication but also managing its volume and placement. Griddle inserts for gas grills don’t have (or, didn’t have when I was considering them a couple-three years ago) drainage systems including receptacles for grease. And when you cover the surface of the griddle with bacon, you’ll need that full capacity!

          That being said Weber is now making griddle inserts for their gassers specifically designed for that purpose, and addressing those concerns. If I were in the market today, I would give those a really close look. A griddle is pretty much a gasser with a flat top instead of grates and flame diffusers, after all. Even in the case where you would use it as a griddle 90% of the time, the other 10% as a gas grill would be there for you! And every now and then I’d love to have the ease and economy of a gasser. If there was a grill insert for my griddle, I’d probably buy it!

          In sum: I wouldn’t give up my griddle for a gasser, but I did give up my gasser for a griddle, and have never regretted it. Not for a second. Anything I cooked on the gasser I’ve done on the griddle. But I cook dozens of things on the griddle (omelets, bacon, pancakes, cheesesteaks, stir frys, vegetable sautés, grilled cheeses, etc etc etc) that I could never cook on a gasser.

              While I don’t have all of the accessories for a Summit charcoal, I do think it is a very well built grill. Also incredibly efficient. I feel like griddles are always easy to buy, if you have a chance at the E6 with the accessories, I’d probably lean that way.

                My cooker arsenal is pretty extensive. LSG stick burner and pellet pooper, Blackstone, pizza oven, multiple kettles, a gasser, and a WSCG. The cooker I use the most, by far, is the WSCG. If you find a deal on one of those buy it now before someone else does. You can pick up a griddle any time, especially on a Black Friday/Cyber Monday sale day.

                    I have found myself in a similar situation. I’ve been eyeing the E6 for over a year and yet still haven’t pulled the trigger. I almost pulled the trigger on the SNS kamado but when I realized it’s the same diameter as the SNS kettle I already own I removed it from my cart. I already had a WSM, gasser, and grill silverback. But I really want the E6. But the. The griddle issue that lingers.

                    My son has been on me to get a griddle because he likes cooking breakfast and pancakes and does so almost every weekend. Last year I was gifted a Steelmade griddle insert for Father’s Day. Right now it’s collecting rust in my garage. While I liked the concept of a griddle that thing was a PITA and more work than it was worth. Plus it’s too small and leaves a lot to be desired. I thought I was ready to move on but alas I’m not. I was at my ace hardware and they had the Traeger griddle on sale for $680. I was so tempted. But I’m not sure what else I would use a griddle for other than breakfast and smash burgers. I need to spend more time watching YouTube videos I guess.

                    As it stands I would go for the E6 because that’s what I’m leaning towards myself. Especially as winter is coming and I’m more sure of if I want to use my SNS or WSM in the freezing weather again.

                    sure enough it’s listed for $1150 on Amazon right now. Lowest new price I’ve seen in a long time 🧐

                      Just based on what you’ve already got, the only thing that the E6 would really bring to the table is the ability to easily 2-zone. Personally, I don’t 2-zone cook all that often. If that’s something you really miss, I vote get the E6. In addition, if you’re happy with your ‘old gasser,’ you could also get a griddle insert for the gasser. I’ve got one from SteelMade and am really happy with it. Is it as large or convenient as a dedicated griddle? No. But it’s still really great, and a way to easily increase the usability of the gasser you already have.

                      If you don’t do a lot of 2-zoning, then I say skip the E6, ditch the gasser, and pickup a griddle. Like I said, I’ve got a gasser with a griddle insert and I love it. But I leave the insert in almost all the time. I could swap out my gasser for a dedicated griddle and 90% would not miss the gasser in the least.

                      Third option, if you’re really missing kettle cooking, it is get a griddle on clearance (should be possible now that we’re in Oct) and pickup a kettle. Heck, in Austin, you could probably even get a used kettle for a good price.

                      These are all good options, really just an executive decision.

                        Y'all have absolutely come through with some great insights. I've been dying to get an E6 for the longest time, but in the interim built up a diverse stable of cookers. I can easily smoke for 50+ people with my offset and pit barrel combined. They wont run for hours untended, but I've got a good system down, and I really like the food they produce. Then I've got the pellet for quick and easy or overnight smokes, and pizza oven for pizza nights.I think Grillin Dad's comments were dead on the money, the E6 really this doesn't add much to my current line up. I already have a quite diverse line up.

                        So I think I will join the griddle gang. I really like the idea of being able to cook more than just meat as mentioned by Mosca We already love to do a breakfast fry up, pancakes, and/or breakfast tacos on the weekends! I can see us doing that and maybe a hibachi night with the kids. Also it seems like it will be great for burgers and dogs when the kids friends are over.

                        I still miss my charcoal grill, but getting another kettle won't be too tough. And I have a santa maria coming in early next year (if it ships on time), so I can wait for that to come in. Maybe my wife can finally stop worrying about what random grill is going to show up next!

                        Thanks again to all that contributed, your experiences and advice was most appreciated. I'll be sure to update with pics of the new cooker once it's set up. Now I just have to figure which one to get. I've already got one offer on the table!

                        Edit: I should also add, the E6 would have me spend more than I sell my PK for, I will break even at worst with a griddle. So the dollars and cents are much more favorable as well.

                        I love having my WSCG but know there really isn’t a Santa Maria option for it so if you want something capable of SM in the future you’re going to have to add another cooker I think. Others are right though, those things don’t come along often, especially with a rotisserie! It would be hard to pass that up.
                        When I come to these decisions I usually ask myself what are all the cooking methods I have already and what method will the new cooker bring to the table, or do way better/easier than something else I have. The biggest gap I see for you is the griddle but it would be nearly impossible for me to give up a charcoal cooker capable of direct and two zone. Heck, maybe you grab a griddle AND a used performer for the same price as the WSCG. You can scratch the griddle itch and the performer will have all the rotisserie and SM attachments you want.

                          Well I actually have a Santa Maria on order, should be here in January (or q1 2025) if the shipping timeline holds. Never really know with kickstarter. As it happens, my dad actually asked me if I wanted my old Weber kettle back because he doesn’t use it, so I’ll be getting that back! A win, win, win!

                        So I decided to go with the Weber slate. Unclebob offered me one heck of a deal on a camp chef. But, I went around to several stores looking at different griddles, including the treager flatrock. And the slate was just on another level. That carbon steel surface is so so nice. The construction is incredible. Ace hardware has an exclusive version with a pop out shelf, magnetic cabinet doors and a built in tote. Plus the ace near my house is doing 15% off everything in the store until the end of the year, including grills!!!! So it was an easy choice when looking at qualify and cost. The traeger was nice, but honestly seemed over priced. I read Huskee reviews of the slate and flatrock, and I feel like the ACE version kind of addresses some of his concerns.

                        I wanted to thank Andrrr for the poblano con queso taco recipe, that may well be my first cook. And of course thank everyone for sharing all of their wisdom!

                        The more grills the better! I have a Weber Summit 6 burner, Weber Performer Deluxe, Weber Kamado E6, and the new Slate 36 inch. Use most during the week and the Kamado mostly on weekends for the longer cooks. I like having the choices 😀
