    Dang! This thing is a beast!! Had to put the seats down to get it in the Jeep. Thank god my wife took the dogs. Off to PA!!

        Definitely defeated last week w respect to time. Got hot n fast steak in tonight. Great cooker! Gonna do the obligatory pork butt tomorrow for the first long cook.

        I think I’m in love. Fantastic cooker.

        I have been eyeing that cooker for a while.....something different in the tool belt. Will be interested to hear (and see) your opinion.

          Glad I was cooking the all forgiving pork butt. Had some massive temp swings trying to learn this bad boy. Enjoyed it though. Everything turned out fine. Did a Costco 2-pack of boneless butts. Cut em in half. Man there’s a lot of real estate on this sucker.

            Tried the Japanese bbq sauce everyone has been raving about. I give it a B/B+. Decent but not exceptional.

            Could be the cold meat near the grate probe. 🤷‍♂️

          I find that the WSCGC's dome thermometer tracks the grate thermometer pretty well, which surprised me. Not a very common finding for dome thermometers.

          Interesting you had temp swings with it in Kamado mode, which I've never really experienced in my cooks on the WSCGC. I had temp swings at first with the SnS in Kettle mode, but they settled out pretty quickly as I made my way up the cooker's short learning curve.

          Your pulled pork looks delicious.

            I used all the leftover briquettes in my starter. Obviously too much as I shot over 300 within 20 mins. Then I shut everything down. Rode around 219 for awhile. Opened it up and hit about 265 for a good long while. Then it continued to creep and I didn’t mind it but then all of a sudden it was over 300 again. I had a learning curve w my ceramic kamado too. Probably lock it in after a couple more cooks.

            I’ll be more disciplined next time when following your instructions. 😂😂😂

              I did this too recently. Coming from a regular Weber Kettle it is soo easy to dial in temps. Some of my Fireboard plots look more stable than home oven.
