    Camel??

    A buddy of mine was gifted a back strap from an Australian camel to cook.....

    Any ideas??

      The standard recipe we use for camel is from his thread.
      Wasn't sure what channel to put this in since it involves rice, eggs, chicken, lamb, and camel. Decided on wild game since it is about the camel, after all. stuffed-camel.jpeg

          I'm thinking maybe SVQ. Ive had success on game roasts for pastramis.

          Sous vide at 120 for 2-3 days until tender.
          Then chill, season, and smoke to medium.

            I assume you mean 130 as 120 is an invitation for bugs and nasties.

          I have a text into my daughter who treats a group of camels as part of her veterinary practice and has been to Egypt and Turkey with the owner of the heard looking at new camels. I know she has eaten camel. I just don’t know what she thought of it.

              Update. (Apologies for the delay)

              When we got into it, the chunk of meat was more marbled than back straps that I'm used to.

              Dry brined and rubbed with lamb rub.
              Smoked and reverse seared to medium.

              Results were good. It's not going to replace beef, on my list but I'd have it again

                I've eaten a lot of camel, not a fan. Then again it was usually passed off as beef, or in one case a camel that was leading a race and almost forgot to intentionally lose to the Royal camel... got invited to a "bbq" right after the race, our terp said it was that camel being served. Maybe he was joking, maybe not. Regardless, not my preference of meat.

                What you got looks a lot more palatable though, and at least you can say you tried it.

                  I have a pack of camel burgers in my freezer. Maybe I will make them this weekend to give them a try.
