Any recipe that you care to share is appreciated. Everything you have posted looks wonderful. I currently get my summer sausage seasoning from a processor in Smithville - I like their summer sausage and they agreed to sell me the seasoning. My buddy runs a grass fed beef operation and it is his processor that I buy from. I already made 20 lbs a couple of weeks ago and everyone around here that I've shared it with loves it. Having said that I'd be interested in trying yours.

9-10 hours. Only a couple cups of venison stock, and some wine to deglaze the skillet I brown the veg and roast in prior. Yes, low. Skinsfan1311

Going to be spending the week of the 16th hunting the back 1,500 acres of my father in law's ranch. Haven't hunted there in over 5 years. Probably do some still hunting the first day or two looking for sign. Once I where the mature bucks are bedding and where they are foraging, I'll set up on a funnel or convergence between the two (hopefully closer to the bedding area) that has the wind in my favor. Want 2, maybe 3 more for the freezer outta our household. Dad harvested a spike a couple days ago out at the farm.

texastweeter You get it! Some people think it’s all about killing. Nothing could be further from the truth. I’ve come home empty handed just as happy as I could be. It’s about the experience and testing yourself. I have more than once put the crosshairs on a nice buck and said bang, never going near the trigger.

It is far from just the harvest. Love calling waterfowl and watching them work into the decoys. Watching dogs working in the field. The conversation and camaraderie with your buddies. And let us not forget those glorious sunrises/sunsets!

Pulled a venison ham out of the cure today. Pics of it hung in the smoker earlier, and graph of up until now. Will follow up as it develops. Working on a bottle of Buffalo trace while while repairing the icemaker in the fridge, and installing a trap seal in the back bathroom shower. About to cook dinner consisting of chicken fried venison, mashed taters and green beans, the replace a bathroom divider door. Been a productive day, even got some grocery shopping done.
