      Fried up the other 2 venison hearts, along with two tenderloins. Served with cornbread (NO SUGAR!), and collards with some of my home cured wild hog ham.

        Venison and broccoli over basmati rice. I have some Buc-ees Sweet & Spicy Ghost Pepper HOT Sauce to add to mine.

          Just finished mixing up 40 lbs of summer sausage. Is chilling in 2 separate fridges to ferment for 60 hours. Will bang out some loose breakfast sausage tomorrow after a Bass Pro Shops run, and then andoullie, hot gut, with some hot Italian to finish it off.

          Cutting some roasts from the rear quarters. 3 will make me 6 roasts, 1 will be cured into a ham for new years day, 1 will be smoked into pulled venison, and one will be jerky. Here are two of the 3 that will be roasts.

ID:	1510991 Today I cooked a neck roast from a Mule doe.
            Basically treated it as a brisket. Smoked it til it was 160, and then wrapped it to bring it to 205. Let it rest for an hour. Sliced and served on buns. It was delicious, and I’ll absolutely do it again hi!

              Hail yeah! Kudos on 2 accounts:
              1) not being scared to smoke a venison roster past rare. I hear "they dry out to much" or "they are too tough" or "it makes them gamey" around so many gun counters, feed stores and deer camps that I get invited to. It's just flat out wrong if you do it right.
              2) using the neck. Man, lemme tell you, a good venison neck can be a great roast or tacos. Looks like you nailed it brother!

                Cured venison hams... now that's one I've never heard.

                So many venison recipes I'd like to try one day, if I ever find a place to hunt or manage to be able to buy some land.

                Deer jerkey just came out of the cold smoke and went into the oven set at dehydrate, high fan, 140°.

                  I have friends that go Elk hunting who are not as industrious as you and they freely gave me all of their trimmed scraps which i made into jerky in a similar way. Cold smoked in a little chief after a wet brining then finished in the oven. 🔥🔥🐿️

                I finally headed out yesterday for the first time to the national forest since early bow season 2021. As expected I had does all around. Had to finally chase two off. Last thing I need is a doe kick to the head. Next trip I'll be better set up for my MRE "cook."

                  Late 70's probably. I don't know about the 80's because I was out of the house. My stepdad got the MCI from training exercises here and in Europe. I've only once tried MRE and it was a long while back. So, my experience might be different now if MRE's have gone through changes/advancements just like predecessors. Jerod Broussard

                I won't hunt on public land in Florida cause I don't want to get shot by a drunk yahoo. But one of my deepest regrets is not hunting anymore. I miss it so much.

                  texastweeter my son and I were discussing that during the Jag game yesterday. We may do it. But I think it may be more feasible for me to just book a guided hunt once a year. As much as I would love it, I just don't have the time to put in the work to develop and hunt a plot of land successfully. I think all that has passed me by.
