Got the chuck roast on the Joe Jr around 250. Gonna take it up to around 160 then chunk it up and throw it in a Dutch oven with some liquid. So I’m not good at figuring out seasoning. I grabbed some packs of chipotle seasoning then got home and found some chipotle peppers in adobo sauce and some ancho chilis from chili season. Any advice on how to make my food good with what I have?? 4 pound chuck roast
Others here will have better advice, - Me however, I would seed the anchos and a bunch of the abol, lightly toast them, then them soak them in boiling hot water for half-an-hour. Then I would put them in a blender with a few of the chipotles and their sauce. Grind that up to they are super fine with some of the hot water and some chicken or beef broth. Once you get a good smoke on your beef, I would braise the meet in that mixture until it is super tender. Throw it on some tortillas and eat like a king!

DTro give good advice. Just go with the ancho and arbol. Add some garlic gloves, a few tablespoons of apple cider vinegar, a cinnamon stick, Mexican oregano or regular. Salt, pepper, and depending on how much you like chipotle, one or two of those.
Here’s a recipe you can kind of riff off of to give you an idea - basic adobo sauce, I use this on a lot off stuff. Chuck for birria, al pastor, on salmon, and chicken as well. https://www.jamesbeard.org/recipes/adobo
but you should be ok with this. You may have to add a bit of the chipotle seasoning depending on the amount of liquid you use, but if you can find some dried Anaheim chiles/NM chile pods, I’d go with those. That will add some great flavor as well.

I’ve been playing around with different ratios for taco’, that could work for ground beef, fish .. of course there could be small changes as you switch protein, but this is pretty dialed in for me.
mixed in the idea of 1 lb of ground beef.
1/2 tablespoon Chili powder
1/2 tablespoon of chipotle chili powder
1 tsp smoked
