    Taco seasoning blend

    I’ve been playing around with different ratios for taco’, that could work for ground beef, fish .. of course there could be small changes as you switch protein, but this is pretty dialed in for me.

    mixed in the idea of 1 lb of ground beef.

    1/2 tablespoon Chili powder
    1/2 tablespoon of Cumin
    1 tsp chipotle pepper
    1 tsp smoked paprika
    1tsp fine kosher ( I use Diamond Crystal)
    1/2 tsp of granulated onion
    1/2 tsp garlic powder

    A sincere question: what is "chili pepper powder"? A pure chile powder of what kind of chile? A "traditional" American blend of spices and chile, such as McCormick?

    Your photo shows, I think, eight separate "spices", yet the recipe calls for six. I'm confused--a standard state for me. ;-)

      I buy mine in bulk, but it says Red Chili Peppers, So just your basic red chili pepper.

      To clarify, @]Richard Chrz , I (being anal) distinguish between "chili" powder (being a blend of spices and chile powder) and "chile" powder (being a single type of chile ground into powder--say, ancho, or guajillo, or chipotle...). To further clarify, to me "chili" is a "stew" that may or may not contain beans--LOL--while chile is an actual pod of any one of a number of chile varieties or, even, species.

      My apologies for not being clear enough--grammar has squat to to with my question/comments. I was simply--and innocently--trying to to distinguish between chili and chile. I will not darken your posts ever again. I promise.

    That'll do!

    For feedback, I add some ancho chile powder, smoked paprika and a dash of ground coriander. Probably some other tweaks from time to time as well.

      Richard Chrz , I don't see paprika, smoked or not, in the original recipe. I suspect I see it in the photo, though. I think that's what Willy mentioned earlier--that there are more spices seen in the photo than listed in the recipe?

      McCormick did us a disservice back when they called 'cayenne pepper powder' >> 'ground red pepper'. I know this from different bottles, old and new, and some issues I have had in recipes I had created. Now they call it 'Ground (Cayenne) Red Pepper'. It took me forever to decipher this one.

      Anyhow, back to recipe.. I'm still trying to figure out the pepper powder. I've got about 6 different types of pepper powders, all of varying heats and flavor profiles, not counting my paprikas. This recipe is very close to mine, so I'm sure it's very good (I dialed mine in, too), though mine includes crushed red pepper flakes. Richard: what brand or source is this, if you can share? I know you said you buy in bulk, but I figured I would check.

      I make my taco meat with ground beef or ground turkey, usually. In my mix, which I do in large batches, it comes out to 2 tbsp per pound of protein. If making with a super lean protein like turkey, I add some oil to help carry the flavor.

      Sweet. Mine is:
      2 tsp chili powder
      2 tsp corn starch
      1.5 tsp cumin
      1 tsp corrieander
      1 tsp kosher salt
      1/2 tsp smoked paprika
      1/2 tsp Chipotle flakes
      1/4 tsp garlic powder
      1/4 tsp onion powder
      1/4 tsp Mexican oregano
      1/4 tsp black pepper

        Hey everyone, sorry for all the confusion, etc on this.

        I have no idea where my brain was on that day, but it was not focused or clear.. But my sincere apologies ( especially Willy ) for my rudeness, (which was deleted by me), just having a bad few weeks.

        I really do not write recipes, except for my seasoning blends, I’ve been learning to take notes a bit as I learn,

            I just did an adjustment on this. My wife and I both feel it is at it’s best right now. Changes are only in cumin and chipotle pepper, I’ve switched their amounts.
