My favorite Mexican cookbook is Frieda’s Fiestas, https://www.amazon.com/Fridas-Fiesta.../dp/0517592355, which includes the lunches Frieda Kahlo used to prepare for Diego Rivera among other things and is beautifully illustrated.
I also agree with the Rick Bayless suggestions above.

I found these two booklets at grocery store checkouts years ago, they’ve kinda been my stepping stones into Mexican.
Im really the only one in the house that likes Mexican.
They're hardly authentic and mostly sponsored but they do have a few not bad dips and dishes to try then build on.
