Does anybody have a good website (or book) they'd recommend as a credible source of authentic Mexican recipes? Seems like the internet has been taken over by here-to-fore unheard of sites that hawk just about every style of cooking, and I don't really trust them.

"Beer is proof that God loves us and wants us to be happy." ~Benjamin Franklin
Rick Bayless and Views on the Road on youtube are two great places to start.
The Border Cookbook by Cheryl and Bill Jamison really takes a good look at the cuisine along the U.S / Mexico border.
Several good recipes here on the site, Troutman 's Homage to the Taco Chronicles recipes come to mind.
Rick Bayless also has a website with recipes: https://www.rickbayless.com/Last edited by 58limited; August 17, 2022, 02:30 PM.

My gear:
22 Weber Kettle
Napoleon PRO Charcoal Kettle Grill
Broil King Keg
Traeger Pro 34
Napoleon Prestige Pro 500
Pit Barrel Cooker
Blackstone Range Combo Griddle
I don't understand why you don't trust web sites for Mexican recipes, there are tons of them out there. Mexican food, like most national foods is not just one style of cooking, each region has unique recipes and cooking methods. Personally, I'm a big fan of food from the Oaxca region. Here's a couple of links:

"I look at the ratings and read the comments. I don't find very many that are simply pushing products and even those that do may still have perfectly fine recipes on them." You're kind of making my point. Yes, I do that too. But, I fail to see how there's no value in seeking the counsel of people whose food knowledge I respect to jump start the process. I'd rather start with Kenji than a pamphlet of recipes from the checkout aisle at the grocery store.

Indeed, I recently used one of Kenji's recipes as a starter for my pork chile verde and it turned out freaking amazing. I've been trying to perfect that for a couple of years and if I'm not 'perfect' yet, it's GD'd freaking good! That chile verde was one of the dishes I've been most proud of in all my years cooking, it sure tripped my trigger, even though some others might not have liked it, I'd eat it every week. Lotta work, though.

fzxdoc the carne asada sauce is excellent. Great all round dip. Also the green sauce from his Peruvian grilled chicken is as good and very versatile. Whenever I make either dish I make more sauce. I'm drooling thinking about it!
