    ChefStep's weeknight strategy

    I know some of y'all don't like ChefSteps but I really love those guys. So nerdy and hilarious, I love their videos. Anyway, they have a weeknight strategy where you mix any SV protein w any vegetable puree and any salad. It took me an hour and 5 mins to bang out this meal. Pretty easy and very delicious. If you're not familiar, you should check it out. Lots of great ideas.

    If you are old enough to remember a world without the internet, you may also have enjoyed a childhood in which the chicken nuggets at a certain ubiquitous fast-food chain were consumed largely without question. Remember those golden bird bites—crispy on the outside, tender on the inside, magnificent when doused with spicy mustard sauce?  If you did not grow up on the nug, fear not. We’re going to help you experience everything good about that eating experience, only instead of mystery meat, we’re using skin-on, flavor-packed thighs—just as fresh and wholesome as you please. We lose the bone and pound ’em flat, then cook them sous vide for that impossibly juicy interior. Then we sear those suckers skin-side down in a hot pan and serve with a yam or sweet potato purée and Our Favorite Simple Kale Salad for a weeknight meal that feels like a treat but is easy to pull off and simple to source at your favorite grocery store or organic market. And if you decide to serve these thighs with salty fries and a toy promoting the latest Disney film, well, who are we to get in the way of your ’90s nostalgia?

      I'm with you brother. Those simple puree, salad, protein dishes are awesome. Endlessly variable. Who can be against those guys, Meathead is in their best videos.

        In June of 2015, a bunch of seemingly able-minded people decided to buy boxed cakes mixes, frozen fast foods, and a few lovely Pike Place Market treats (including, we’re sad to report, some really good prosciutto) and run them through the waffle iron for kicks. They even shamefully stole a gluten-free Mexican casserole from their pregnant, gluten-free coworker and tried to waffle that bit of messy business. The vomitesque results may have scarred her for life.What you’re about to see is video footage from that dumb, dumb day. It should go without saying that we cannot be responsible for what happens to your waffle iron should you decide to get adventurous in a similarly ill-conceived manner. We can’t even offer you the precious slice of life you lost watching this thing. That, you’ll never get back. We can, however, put forth a little advice: if you bring your lunch to work, consider labeling it with a Sharpie. Because if there’s anything to be learned from this largely unfortunate incident, it’s that your coworkers may be a bunch of inconsiderate jerkfaces. Oh! And you can make an awesome Funfetti layer cake using the waffle iron. Like, really awesome. Like maybe you should try it awesome. So, okay, that we recommend. But leave the gluten-free Amy’s organic casserole out of it, won’t you please?

      I haven't tried any yet but I want to. I'm a big chefsteps fan. You can't argue with all of the free content they put out.

        Crispy skin chicken thigh with a kale salad and sweet potatoe puree?. I've tried it and it was one of the best indoor cooked meals I've ever had! Great combination of flavors and textures...
