Speaking of beans, I just happened to download some bean recipes from Cook's Illustrated/America's Test Kitchen newsletter:
Confit Beans with 40 Cloves of Garlic | America's Test Kitchen
Cacio e Pepe Beans with Squash, Sage, and Walnuts | America's Test Kitchen
Mapo Beans | America's Test Kitchen
If you aren't a subscriber to either site, which is my situation, and you have Paprika, it will cut through the paywall.
BTW, pinto beans get my vote, in response to the original question. I don't usually add beans to my chili, but I'm not a purist, probably because I'm merely a naturalized Texan (for over 50 years).

I have been absorbed by the Rancho Gordo hivemind, and use a bunch of their varieties. They have some great black, red, pinto, and things like vaquero and Good Mother Stallard... yum yum. Black bean and turkey chili is fab.
