I love this idea of creating new flavors of cheese. I can see this as a nice Christmas gifts to friends.

Can you blend 2 different cheeses together?

An off-the-wall idea: Finely grate each cheese, then mix in the peppers, then find a mold with a follower that you could use the compress the mixture at room temp. Something as simple as C-clamp could provide compression, maybe a tuna can for the mold and ???? as the follower.
