I am a fan of lactose ferment but truthfully concentrate mostly on kraut.
Looking to add some variety here and expand on to quick pickles.
Not necessarily cucumbers but anything quick and easy.
What is your favorite quick pickle with recipe if possible.
Quick pickle is new to me. I've eaten them made by others but never done them myself.
There are two kinds of pickling that use a vinegar solution - either pure vinegar or vinegar with aromatics added, quick pickling and then regular refrigerator pickling.
Both are "pour vinegar solution over items" techniques, but quick pickles to me are things that you can pickle and which transform a little at least in 1 hour or less. Red onions are a classic. You can quick pickle almost anything as long as it's fairly absorbent. Onions do well. Radishes for obvious reasons. Carrots etc too.
Refrigerator pickles might take a few days to come together but are also meant to last more or less indefinitely in the fridge. A sweet sandwich pickle is my go to here. Use 5% vinegar (white or apple cider) with some sugar. Start at 1/2 the sugar of the vinegar (i.e. if you use 1c of vinegar, 1/2 c of sugar). Add pickling spice mix. Boil to dissolve, pour over jars filled with sliced Kirby cukes. let cool, toss in the fridge. Mmm.

The serious eats info rickgregory posted above is also one of my go to spots for quick pickling. Simmer an aromatic vinegar solution, let it cool and pour it over what ever it is you want to pickle and let it sit. Pretty easy and good, as a snack even!
Try pickling red onions in lime juice - add a little salt and pepper. Ready in 30 min. Great on Mexican dishes, but you can use it just about anywhere you would use sliced onions.
