I want to try this for a family get together at the end of the month. But I have a thing about canned veggies, ate them growing up and hated them. So I would like to use fresh or frozen corn in this. Do you think an equal weight as the canned would be the right proportion? Plus I have way to many Rancho Gordo beans not to use them.
Am I on the right track?
This stuff is so versatile you can pretty much use what you want. I’ve used canned, frozen and fresh corn and they all work. I like to fry the corn just a little first, gives it a little more flavor by bringing the sweetness out.
